We're roasting this to a light-medium level. Just a little bit more than our Honduran coffee. You'll still get plenty of fruity and sweet notes as well as some darker flavors like plum and rasin. It's a medium body coffee that goes great in just about any brewing method you can throw at it.
The Mierisch family has been growing coffee since 1908. They currently have farms in Nicaragua and Honduras. In addition to providing several Cup of Excellence coffees, they are on the leading edge of developing new and interesting methods of coffee processing.
This particular coffee is grown at Finca La Huela in the Matagalpa region of Nicaragua. Dr. Edwin Mierisch Sr. closely oversees this particular farm and his family provides much of the oversight of the farm on a day-to-day basis.
